What is the harm in leaving my canned vegetables exposed to light?

We could store them in a box in our closet, so space is not an issue. We're putting up some shelving in our kitchen and my wife suggested that we put some on the shelves. They are quite pretty. The area would get light from the kitchen light and a bit from a couple of windows, but definitely not direct sunlight.
